  • · 1 Tsp Baking powder
  • · ½ Tsp Baking soda
  • · ¼ Tsp salt
  • · ½ cup unsalte butter softened
  • · ¾ cup brown sugar or coconut sugar
  • · 2 large egg
  • · 1 cup crushes pineapple ( with juice )
  • · ¼ cup Greek yogurt’s or coconut milk
  • · 1 Tsp vanilla extract

For the Pineapple Glaze :

· ½ cup powder sugar
· 2 Tsp pineapple juice
· 1 Tsp lemon juice

Optional Topping :

· Thin pineapple slice’s
· Toaste coconut flake

1 . Preheat & Prepare :

  Preheat oven to 350°F ( 175°C )- Grease and line a 8 inches round cake pan.

2 . Dry Ingredient’s :

  In a bowl whisk together flour baking powder baking soda and salt.

3 . Wet Ingredient’s:

  In another bowl beat butter and sugar until fluffy. Add eggs one at a time then mix in crushes pineapple yogurt and vanilla's.

4 . Combine:

  Gently fold dry ingredient's into the wet mix. Do not over mix.

5 . Bake:

  Pour batter into the pan. Bake for 35 to 40 minute or until a toothpick come out clean.

6 . Glaze:

  Whisk powder sugar with pineapple and lemon juice. Drizzle over the Cool cake.

7 . Serve and Enjoy

  Top with Toasted coconut or fresh pineapple slice.
